I’ve discovered more greens and yummy recipes! This would totally be something I would’ve gotten into years ago because it was the “cool” or “trendy” thing to do but, the more research I do, the more I realize this is nothing new. I’m taking about the power of veggies and fruits.  Since my diagnosis I’ve spent way too many hours reading and researching FOOD. Even though it was a cancer diagnosis that brought me to this, I’m OK with that. Because I’ve been slowly incorporating some of the things I’ve found into my daily life.  The only thing I have to fight this thing from coming back in the future is my diet. I don’t get to take a magic pill for 5+ years, but instead I get to make a dramatic change in the way I see food. I now start every morning with a vitamin packed, energizing yummy drink. I have a favorite green juice that I’ve made and a favorite “pink” juice.  This is also a must have in the days following chemo.

My Green Juice

  • Cucumber
  • Kale
  • Spinach or any leafy greens
  • Celery
  • Lime/lemon
  • Avocado
  • Pineapple/mango/orange

My Fav Pink Juice

  • Coconut Milk
  • Banana
  • Any combination of berries
  • Spinach

Notice I have no measurements for any of these. One reason is because I hate measuring and I’m never “precise” when cooking anyway. The second reason is because you have to experiment to find what you love. For example, I use a whole cucumber but only 1 celery stalk. If you really LOVE your celery then add more. Celery makes me gag….so I try to dillute the taste.
